Spotlight on The Abbey Café and Gallery: A Gem in Fredericton, NB 

Nestled in the heart of downtown, The Abbey Café and Gallery is more than just a coffee shop; it’s a vibrant hub of community and creativity. With its warm, inviting atmosphere, the café is the perfect spot to unwind, enjoy a delicious meal, or sip on locally roasted artisanal coffee. We spoke with co-owner Tabatha Smith to learn all about Fredericton’s only fully plant-based café. 

“The genesis of The Abbey came from the lack of fully plant-based offerings in the area” says Smith. “My old business partners and I had discovered the benefits of a plant-based diet on our health and for maintaining energy levels, so we wanted to introduce that to Fredericton. There’s a lot of misconceptions about plant-based eating, so we strive to be a stepping stone for people to experience how incredible the food can be.” 

Grilled paninis, hearty chili, salads, and soups are among their most popular dishes. Apart from serving up mouthwatering meals, The Abbey is also a prominent hub for community groups, while their gallery space showcases local art for sale, with all proceeds going to the artist and the local community kitchen food bank.  

“We’re always pleased to see community members using the space, not necessarily as a café but as a space altogether, where people can gather. We have lots of students who come here to study and take a break. We’ve started working with Eddie Young of Roots & Soul Music Promotions, who is really in tune with the local music scene, and he’s been booking bands in our space, which we love. We’re really hoping to host more events, so I’d like to extend the offer to anybody who wants to organize a gathering and is looking for a place, please reach out to us!”
